Did you see how cleverly I avoided saying a bad word?

My kids LOVE this recipe, and its one of our favorite comfort foods. 

No-Bull Sauce (below)
Its-NOT-a-Ricotta/ Vegan ricotta cheese (also below)
1/2 package whole wheat lasagna noodles

For the No-Bull Sauce:

The brown sugar in this recipe takes away the acidity that many people can't tolerate in pasta sauces, and also takes away some of the heat of the cayenne pepper, while retaining the flavor, making this recipe very kid-friendly, and the vinegar brightens the flavor of the sauce without making it taste too acidic. 

1 large onion
2-16 oz jars sautéed tomatoes
1 can diced tomatoes, undrained
1/2 package Light Life Gimme Lean beef flavored vegetarian meat substitute
1/4 cup brown sugar
1 tbsp garlic powder
1-2 tsp chili powder
1 tbsp basil
1 tsp smoked paprika
2 tbsp vinegar
salt and pepper, to taste

Sauté onion in large pot until nearly soft. Add both jars of sauteed tomatoes and the can of diced tomatoes and simmer. Add brown sugar and spices and continue to simmer until the brown sugar is dissolved. Crumble Gimme Lean into the sauce in small pieces and stir in. Finally add the vinegar. And simmer about ten minutes. 

Its-NOT-a-Ricotta (Vegan ricotta cheese)
(makes about 4 cups) 

1 cup raw cashew pieces
2-14 oz block soft tofu
2 tbsp salt
2 tsp garlic powder
2/3 cup soy milk
2 lemons

In a DRY blender, grind cashew pieces, 1/4 cup at a time.

In a separate bowl, crumble tofu into small pieces.  Add salt, garlic, and cashew pieces to tofu and combine with a hand mixer. Squeeze lemon into tofu and add soy milk. Mix until cheeze has a smooth consistency.


Preheat oven to 425 degrees.

While oven is heating, prepare the ricotta cheeze and pasta sauce. Boil noodles.

In a large casserole dish, ladle a thin layer of sauce onto the bottom of the casserole. 
Add one layer of lasagna noodles, one layer of cheeze, and one layer of sauce. 
Repeat with remaining ingredients to create three stacks of layers.

Bake for about twenty minutes and serve.
