This charming recipe is adapted from my mother’s “Chocolate No-Bake Cookies” recipe. While I dearly enjoy chocolate, I have to agree to disagree with her grossly misinformed policy pertaining to the “’no bake” conflict, as well as the whole dairy issue… so behold! Chocolate Ganja No-Bake Cookies! "A new twist on an old favorite," as Betty Crocker would say!

Chocolate Ganja No-Bake Cookies

Ingredients

2 cups organic raw (turbinado) sugar
1/2 cup ganja oil
1/2 cup organic soy milk plus 1/4 cup dry soy milk powder 
1 tsp real vanilla
3 tablespoons cocoa (unsweetened)
1/2 cup peanut (or soy) butter
3 cups organic rolled oats

Directions:

In a medium saucepan, combine all ingredients except peanut butter and oats and cook over low to medium heat (no point in cooking out the THC…”Waste not, want not,” Mother DID say.)

Warm until the sugar has lost its gritty texture without bringing to a boil for 5 minutes-ish stirring constantly.

Remove from heat and stir in peanut butter and oats, then put the whole mess in the freezer for five minutes. Remove from freezer and scoop spoonfuls onto waxed paper or into lined cupcake pans and refrigerate until firm, or just bag the whole thing and eat it hot. Mmmmm… Raw oats and chocolaty ganja goodness… so healthy…you know Grizzly Adams would do it!
